
A note on miso paste for my fellow vegetarians and vegans– make sure you read the ingredients! Miso paste is sometimes made with fish or shellfish. There is usually 1 or 2 meat-free options at the store. Also, your miso paste can be made into a sauce, dressing, and mixed with your rice. You can use it in so much so feel free to get a big tub of it.
Simple Miso Soup
Ingredients:
- 3 tablespoons of miso paste
- 2 medium scallions
- 1 tablespoon of wakame seaweed
- 1 ounce of extra soft tofu
- 2.5 cups of water
Instructions:
- In a small pot, bring the 2.5 cups of water to a gentle simmer over medium heat.
- Slice the scallions and put the whites of the scallion in the simmering water. Save the green slices for garnish at the end.
- Add the 1 tablespoon of wakame seaweed. Let simmer for 2 to 3 more minutes before turning off the heat.
- Remove the pot from the heat and add the 1 ounce of extra soft tofu and 3 tablespoons of miso paste. Stir to break up the miso paste so that the soup starts to look a bit cloudy.
- Ladle the miso soup into bowls for serving and garnish with scallions.
